ca18det temp fluctuating ?? help ??

I went out in the car tonight and it was fine for a couple of hours then on the way back the temp wen t up to the red then came back down again it did this several times then stayed on the red so pulled over then the steam started coming out of the header tank the only thing is if i press on the rad cap it stops bubbling out of the header tank, i have taken the thermostat out and still the same also tryed my mates rad cap and still the same ??
HELP PLEASE

There is another explanation but I dont want to scare you.

Two Q's:

Do the heaters work? What about when the temp goes in the red?
If you drive the car TOTALLY off boost, do you get the same problem?

yer it will happen at random times if you drive under boost it still does it the only other thing i can think off is i have a fmic could this be blocking air getting to the rad also the heaters work when on red but will go cold when it drops

docwra you were right head gasket gone today big time only changed 350 miles ago i think i was supplyed with the wrong gasket apparently there is 2.
